Furumachi Koji Seizosho “Koji”
Furumachi Koji Seizosho “Koji”

Here’s an introduction to Furumachi Koji Seizosho’s “Koji.”

“Koji” is an amazake made from rice koji.

This amazake is made by enzymes from koji mold, which convert the proteins in rice into amino acids; it contains all of the essential amino acids that the human body cannot synthesize on its own.

This is a non-alcoholic, sugar-free amazake sweetened solely by rice.

Furumachi Koji Seizosho introduces delicious ways to enjoy amazake beyond just drinking it plain.
- You can enjoy it just as it is.
- You can chill it or warm it up.
- You can add ginger juice, yuzu juice, or other fruit juices.
- You can mix it with soy milk, if you like.

Since the rice particles in amazake settle at the bottom, be sure to shake it well before drinking.
- Rice Koji Amazake
- Non-alcoholic
- No sugar added
Recognizing the wonders of koji, the company opened a specialty koji store in Furumachi, Niigata, in 2009.

The amazake comes in a glass bottle with a silver lid.

The amazake was 500 ml, and I enjoyed it by drinking it in several servings.

Since the amazake is plain, the glass bottle has a label featuring rice grains.

Furumachi Koji Seizosho is known not only for its amazake but also for its amazake-based sweets, which feature unique and adorable labels.

My thoughts on drinking amazake

The amazake poured into the cup is milky white in color.

When I took a sip, it had a very smooth texture, with the gentle aroma and flavor of rice koji amazake—a type of amazake whose sweetness didn’t linger.
