My thoughts on drinking amazake


Since this is concentrated amazake, dilute it 2 to 3 times to make it ready to drink.

When I opened the large bag, I caught a faint scent of rice koji and sake lees.

This time, I wanted to make a rich, amazake, so I diluted the cotton-foot mixture by half.

I turn off the heat just before it comes to a boil, pour it into a cup, and my amazake is ready to drink.

The amazake you drink contains small grains of rice, so you can enjoy their texture.

This amazake has a subtle, gentle aroma and flavor of rice koji and sake lees amazake that spreads throughout your mouth with just one sip.

Since there was so much that I couldn’t finish it all, I divided it into smaller portions, froze them, and saved them—then thawed them when I wanted to make amazake.
